Nothing impressive.  Atmosphere was blah and run down.  Service was less than desirable.   Server was pleasant enough but not attentive and there were three other tables.
The three stars are for the delicious homemade bread.
Doubt I would go back again.

Do you know what Two Brothers has? It has character.

It also has those house made potato chips with wing sauce, cheese sauce, and bacon. Dear god. Those are my new guilty pleasure. Do you want to know the way to my heart? Fry something, slather it in wing sauce, and serve it alongside some fatty meat. It's a magical formula. And it makes for some incredible bar food.

And sure, I suppose you could come to Two Brothers for other things. But it seems from the other reviews, those aren't worth writing home about.

But people can't live on beer and chips alone. Thankfully, the rectangular tavern pie is totally solid. The cheese is nicely burnished, and everything has nice flavor. The bottom crust even gets nicely golden brown. However, the toppings across all pies are pretty sparse and haphazardly distributed. So if you like bacon on your pizza, don't be shy about ordering double bacon. Actually, I'd double every topping you want to taste in every bite. For real. Fortunately, the prices are reasonable enough that going with extra toppings isn't going to break the bank.

The Mozz & Melba is totally solid here. The wings are skippable, as are the smaller round pies.

What should not be missed though is the fried dough. You really only need to order one for the table. But like my other dining companions noted, make sure to order it with a side of melba sauce, because fried dough with sweet and tangy fruit sauce, is flipping phenomenal.

Props to Lauren L. for making that discovery. And a shoutout to Steve N. for thinking that we might find something special in this little old place up Hoosick.

Oh, and whatever you do, don't get delivery. Delivery will kill fried foods and punish your pizza. Eat in this old school dining room, and enjoy some classic Capital Region comfort foods.

You might wonder whether you've selected the best place to have your Thursday monthly gathering when you enter at 7 pm and the dining room is empty.  And especially when no one else arrives by closing time at 9 pm.  But don't let that scare you away from Two Brothers because you might be missing out on some satisfying food.

Our party of 7 started with a pitcher of Druthers' All-In IPA, soon to be refilled a couple more times throughout our dining experience.  That was the first positive sign that this place has potential.  Two Brothers had on their menu all the things that our group typically looks for in our tour of taverns - wings, mozzarella sticks, pizza, and something that might peak our interest that is not readily available elsewhere.

And so we ordered both medium and hot wings, the mozzarella sticks with melba sauce, and Two Brothers Chips to get us started.  The medium wings were more mild, and the hot wings had only a little heat.  Because the meat was a little dry, we'd suggest if you order them crispy as we did, that you also order them wet or with extra sauce on the side.  Otherwise they were average.

The mozzarella sticks  were nice with a crisp breading and a good stretchy pull to the cheese.  The melba sauce was one of the better that we've encountered.  The item that peaked our interest on this menu was the Two Brothers Chips - house-made potato chips topped with melted cheddar cheese, crispy bacon bits and their wing sauce.  These were a hit with everyone at the table.  Personally, I would have liked the chips to have been sliced just a bit thicker, but I'm splitting hairs at this point.

Moving along to the pizza, we tried three different varieties.  A small Country Margarita with its white crust is topped with broccoli, sliced tomato, garlic and mozzarella.  All but the white-pizza-hater at our table found it good.  While a bit heavy handed on the cheese, a disappointing characteristic that was to reappear on the other pizzas as well was a dearth of other toppings - in this case the broccoli.

The Mellanzana pizza was light on the eggplant and spinach, in my opinion, but had a reasonable amount of roasted peppers and mozzarella.  In all honesty, I really don't recall tasting the tomato sauce on this one.  The table's favorite however, was the Meat Lovers pizza.  Known among our cabal as the Steve N pizza, it came with pepperoni, sausage, ham, meatballs, bacon and mozzarella.  The quantity and distribution of some of the toppings could have been better, but most of the slices gave the pizza lover a taste of everything that was there.  The dough for all the pizzas is a not too thick Neapolitan style with good flavor.  Once again however, I really don't remember the taste of the pizza sauce.  The menu does offer the option to order extra sauce.

Our server was very efficient clearing used plates and trays and periodically checking on our needs.  When she inquired if we were interested in coffee or desert at the end, we opted to try the Fried Dough.  After all, they make their dough fresh every day for their pizza, so why not.  It was another hit for the table.  It was light with some crispy air bubbles and sprinkled powdered sugar on top.  And we discovered that it went really, REALLY well with some left over Melba sauce that we had on the table.

I'm going to give Two Brothers four stars, but the key to those four stars is to understand what these guys are, and what they do well, and to keep expectations in check.

Two Brothers is definitely a spot favorited by locals. I arrived before the rest of our group. I killed time at the bar sipping a beer. When I was there, it was definitely a crowd of regulars who knew each other and knew the bartender. The crowd was older, and I imagine many have been going to Two Brothers for years. I saw many of the regulars eating pizza, or taking a pizza to go.

By the way, that beer was a pint of Druthers' excellent IPA and it was a cheap $4.95.

Our group didn't order any entrees, but we did sample several apps and the pizza, and fried dough for dessert.

Those apps are about as good as one would expect at a joint like Two Brothers. I can see myself stopping in for a beer and ordering an app or two. The star of the show were the 'Two Brothers Chips'. Housemade potato chips smothered in gooey orange cheese sauce with bacon and wing sauce. I could eat a pound of those things. Ask for extra wing sauce on the side to give them a little more zing. Mozz sticks with melba sauce were good too.

We weren't impressed with the wings, but your mileage may vary.

The pizza here is likely the foundation of the business and I'm sure it's what keeps people coming back.

The round pizza is decent, except the two we ordered had too much cheese and oddly, not enough toppings. The rectangular 12 cut is the one to get though. Pan style, with a crispy crust that's just the right thickness with wonderfully browned cheese, it was great. It didn't suffer from too much cheese like the round pizzas did, but it could've used a bit more toppings. Even if you're eating alone, skip the smaller round pies, get the 12 cut pan pizza, and take the leftovers home.

The fried dough was excellent. Light, crispy, and not at all greasy, it was a great way to end our meal. A person in our group saved the melba sauce from the mozz sticks and dipping the fried dough into the melba made for a home run. If you get the fried dough, insist they give you a side of the melba with it, trust me, you'll be glad you did.

I'll admit I had low expectations for this place, mostly because it doesn't look like much on the outside and it has a very basic menu of bar food and red-sauce Italian staples. But there were actually quite a few solid options during a recent visit, and the pizza was surprisingly good.

The biggest "miss" for me was the order of hot wings - not much flavor, very dry, and pretty boring. I would recommend skipping this. I also thought the mozzarella sticks were just ok, although the melba sauce had a nice strong raspberry flavor.

We tried a few pizza options, including a white "Country Margarita" with broccoli and tomatoes, a specialty pie with eggplant, red peppers, and spinach, and a large rectangular cut pie with hot peppers, bacon, and ham. The best in my opinion was the eggplant pie, which had the most toppings and the best thin, crunchy crust. There was a good amount of red sauce and it was a flavorful combination overall. I also really enjoyed the rectangular pie, which had a great tavern style crust and a perfect layer of cheese, although it was a little sparse with toppings.

The other standout from our meal was the "two brothers chips," which are covered in cheese sauce, wing sauce, and bits of bacon. Definitely a gluttonous choice, but delicious.
